Discover the creative power that comes from using spices confidently, whether starting with our recipes or your own favorites. Put your pantry spices to use in more adventurous ways, without spending a lot of money. No matter the spice or blend you reach for, and to some extent, no matter the cuisine, there are key techniques that will unlock a spice’s flavors and aromas and make your food taste its best.

Inside the Book:

  • A combination DIY spice manual and recipe collection that helps you use spices intuitively to make your food taste amazing
  • 139 foolproof recipes and 47 homemade spice blends
  • Beautiful color photos for every recipe and many techniques, plus enticing photos of spices, blends, and infusions
  • An introductory spice reference section provides spice listings with basic information, uses, and brand recommendations. We show you how to use these spices and how to store and grind them.

Give It a Rub: robust coatings for meat and more

Spice rubs create a complex aromatic mix; when the spiced food hits heat—from the oven, pan, grill, or oil—the spices’ flavors come alive. We offer up seven rubs to make yourself or purchase at the market, including jerk rub (make Oven-Roasted Jerk Pork Ribs) and cajun-style rub (make Blackened Snapper with Rémoulade).

Let It Steep: spice-infused oils, pickles, and preserves

Steeping is about flavor transportation. Brines transport spice flavor to the center of a vegetable. If it’s an infused oil, steeping opens up the complexities of the spice within and then adds layers of complexity to other recipes as you cook. The longer a spice or seasoning steeps, the more flavor is extracted and imparted to the liquid. We tasted fennel in a new way after steeping the seeds in warm oil. Its flavor became less pungent and more floral than we could imagine. We offer five spice-infused oil recipes, and they’re all fresher-tasting and much more economical than the versions you’d find in specialty stores.

Finish with Flair: blends, single-spice sprinklers, and sauces

Spice blends and sauces are great to have on hand to quickly and easily dress up finished dishes by adding flavor, color, and texture. Spiced features recipes for seven finishing spice blends from pistachio dukkah to parmsean-black pepper and nine spiced sauces such as saffron aioli, chermoula, and garlic-curry sauce. We also highlight eight single-spice sprinklers including sumac (a dusting hits Middle Eastern food with lemony bite) and nigella, sesame, and poppy seeds (these three provide richness, earthiness, and crunch).

Go Beyond Vanilla: bringing sophisticated flavor to baked goods

Make the last course of any meal more interesting by using more than just vanilla to flavor baked goods. Check out the blends, infusions, and distillations we use to spice up our sweets, along with breakfast treats, breads, and desserts we developed to use them, in Spiced.

Product Description

Harness the power of spices to take your dishes from simple to spectacular with 139 exciting recipes, plus find 47 easy spice blends and condiments you can use many ways.

Spices: You probably have a cabinet full of them, but do you know how to make the most of them? Spiced opens up the world of possibility hidden in your own pantry, with six chapters, each of which shares a way to use spices to amp up the flavor of your cooking, along with foolproof recipes that put these simple techniques to work. Sprinkle a finishing salt you make from sea salt and herbs on seared white fish fillets to make them special. Make a different roast chicken every week by applying a different rub. Learn the best spices to use in curries--and when to add them for fragrant (not dusty) results. Add flavor--and texture--with homemade blends (you''ll eat your spinach when it''s topped with pistachio dukkah). Infuse condiments with spices (try chipotle ketchup on a burger). With the following six simple techniques, plus vibrant recipes, you''ll find yourself not only spooning chili powder into the chili pot but making the chili powder yourself, or flavoring desserts with saffron or cardamom rather than just cinnamon.

#1: Season smarter with salt and pepper. You''ll learn about brining, using peppercorns of all colors, and making finishers like sriracha salt.
#2: Give meat and vegetables a rub. We''ll provide blends that you can put to use in our recipes (try juniper and fennel on salmon) or your own.
#3: Bloom and toast. Bring out ground spices'' complexity by cooking them in oil; unlock dried chiles'' fruity or nutty flavors by toasting them.
#4: Finish foods with flair. Spice-and-nut/seed blends likes shichimi togarashi (a mix of spices, orange zest, and sesame seeds) add texture, too.
#5: Let spices steep. Infuse spices into condiments like pickled fennel that punches up chicken salad or rosemary oil to drizzle over bruschetta.
#6: Bake with spices. Go beyond vanilla by rolling doughnuts in strawberry-black pepper sugar. Make your own rose water and add it to pistachio baklava.

Review

"After a pleasantly textbook-ish introduction that includes a spice glossary and a whole chapter devoted to seasoning with salt and pepper, subsequent recipes are grouped by method, like coating foods with spice rubs, toasting and blooming spices to intensify their flavor, or finishing foods with a sprinkling of spice or a sauce. A handy reference also lists the book''s globally influenced dishes (nearly 150 in total) by course and spice."
